Light Relief in Banana Bread

After the serious message I wanted to get across in my last post I thought, given it’s Friday afternoon here and the weekend is set to be a scorcher, I’d lighten the mood with a spot of baking.

I’m no top chef, so posts of this nature are likely to be rare in this corner of media social but since it’s my hubby’s birthday on Monday I decided I’d attempt to bake him a cake.

Now, as we’re still on health kick I opted to look for a lighter version of the sugary cakes I would usually go for and bake one of Deliciously Ella’s creations.

I am awaiting the results once the creation comes out of the oven in 10 minutes, and off course the proof is in the tasting, but so far it’s looking and smelling good!
